Established by Roman natives Fabrizio and Francesca Virgili in January 2021, this rustic eatery has quickly become a local favourite, offering a truly authentic Italian dining experience.


The name "Sapori," meaning "flavours" in Italian, perfectly encapsulates the restaurant's essence. Here, traditional recipes passed down through generations come to life, showcasing the rich culinary heritage of Rome and Calabria.


At Sapori, authenticity reigns supreme. You won't find pizzas topped with BBQ sauce, pineapple, or chicken schnitzel. Instead, the Roman-style pizzas feature a thin crust with toppings that extend to the very edge, a testament to the culinary expertise of Francesca's father, Rocco, who has been perfecting his craft since childhood.


"We're committed to preserving traditions," Francesca explains.


"Each dish has a story. Take our carbonara, for instance. It's a coal miner's dish, with pepper symbolising coal dust. And no, we don't use cream – that's not authentic."


The dedication to genuine flavours is evident in their sourcing practices. Many ingredients are imported directly from Italy to ensure the authentic taste of the homeland. Every component is carefully selected, from less fatty Italian speck to more flavourful salami.


Daily handmade pasta, freshly prepared tiramisu, and cannoli are staples at Sapori. The dessert menu rotates regularly, featuring Francesca's homemade gelato in flavours like pistachio, Nutella, hazelnut, and zabaglione – a particular hit among returning patrons.


Complementing their delectable Italian cuisine, Sapori at Tailors also offers a curated selection of Italian specialty products, many exclusive to Newcastle. Patrons can browse an array of authentic Italian pasta, confections, and beverages, allowing them to bring a taste of Italy into their own kitchens. This enhances the dining experience and provides a convenient way for locals to access high-quality, difficult-to-find Italian ingredients.
